Easter Children’s Buffet

This Easter, our kids are treated to flower-shaped sandwiches filled with egg salad, bunny-shaped ham and cheese sandwiches, a veggie tray that looks like a carrot, fruit and peep skewers; and “peep” deviled eggs.

Flower sandwiches 1

EGG SALAD SANDWICHES

10 hard boiled eggs, peeled (peeling them while they are still hot makes the shells easier to remove) and sliced

1 cup real mayonnaise

1 heaping tablespoon spicy mustard

½ teaspoon salt

¼ teaspoon pepper

24 slices of thin, white bread

1 carrot, peeled and thinly sliced

2 green onions, ends thinly sliced, lengthwise

1 tablespoon butter

 STEP 1

Mix eggs, mayonnaise, mustard, salt and pepper together and keep refrigerated until it is time to assemble sandwiches.

STEP 2

Cut bread slices with the flower cookie cutter.

STEP 3

To assemble sandwiches, lightly butter each flower.

STEP 4

Spread a thin layer of egg salad on half the flowers and place other flowers as lids.

STEP 5

Press carrot slices in middle of each sandwich to look like the stamen.

STEP 6

Place sandwiches on a plate and garnish with thinly sliced green onions as stems and grass.

Makes 12 sandwiches

Bunny sandwiches

BUNNY HAM & CHEESE SANDWICHES

12 slices of deli ham

12 slices of cheddar cheese

1 tablespoon butter

24 slices of thin, white bread

STEP 1

Cut bread slices using a 3-inch round cookie cutter.

STEP 2

Cut cheese slices using a 3-inch round cookie cutter.

STEP 3

Cut ham slices using a bunny shaped cookie cutter

STEP 4

Using remaining bread, cut 12 smaller circles (1 inch)

STEP 5

Butter round slices of bread.

STEP 6

Place cheese slices on 12 slices of bread.

STEP 7

Place each ham slice between two round bread slices so head and ears show outside of the bread.

STEP 8

Put remaining bread slices on top to form sandwiches.

STEP 9

Place smaller bread rounds on sandwiches to form bunny tails.

Makes 12 sandwiches

Our peep skewers are fun to make and the kids love them!  We used red grapes, honeydew melon. cantaloupe, and marshmallow peeps and placed them on wooden skewers.  We placed half of the cantaloupe upside down in an Easter basket and put the skewers in that.  Cover it up with some green-colored coconut to look like grass and it looks awesome!

These fun treats are easy – simply add pieces of fruit (we used honeydew melon and cantaloupe), grapes and peeps to wooden skewers.

A great way to get the kids to eat their veggies is to shape them into something fun!  Sliced carrots and cut broccoli are all that’s needed for this arrangement.  And some good dip, of course!

PEEP DEVILED EGGS

Twelve large eggs
Carrot piece
Black olives
Mayonnaise
Salt
Pepper

STEP 1
Hard boil eggs, cool
STEP 2
Peel eggs (peeling them while they are still hot makes the shells easier to remove) and cut in half, horizontally
STEP 3
Empty yolks and place in a bowl
STEP 4
Mix yolks with 3 tablespoons mayonnaise, salt and pepper to taste
STEP 5
Place bottom of each egg in a dish that will allow eggs to stand upright
STEP 6
Using a star tip in a frosting bag, pipe approximately two tablespoons into each egg
STEP 7
Place small pieces of cut olive as the peep’s eyes
STEP 8
Place small, rectangular piece of carrot as the beak
STEP 9
Place top of egg on each peep
